As in the past, we leave the flowers to dry in the field for 1 or 2 days before distillation, this is what we call the traditional “préfanage” (pre-milting technique). This drying step aids the removal the moisture from the flowers, thus helping to ensure the highest quality of the extracted essential oil. Distillation takes at least 1 hours in our family distillery, using the traditional method. Making a good lavender essential oil is the art of taking time.
